clean-eating oatmeal cookies
What's up people?! I'm back once again. It may have seemed I kind of "disappeared" off of the internet forever, but here I am.
A few months ago, I published my "I am stumped" post, and my lovely friend, Bluebutterfly (aka Emmaline), suggested I post more health related advice and recipes. So, without further ado, let's jump in!
Makes about 22 cookies
Nutrition Facts (Per cookie)
Calories - 109
Carbohydrates - 15 grams
Fat - 5 grams
Protein - 2 grams
Sugar - 6 grams
(If you're worried about no trans fats or low sodium, don't worry. None the recipes I post have trans fat.)
Ingredients
Liquid ingredients:
1/2 cup olive oil
1/2 cup all natural honey
1 egg
1 tsp vanilla extract
Dry ingredients:
1 cup whole wheat flour
1 1/2 cups oats
2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp nutmeg
You can also 1/2 cup of raisins, chocolate chips, or walnuts if you want a little extra goodness. It will add to the nutrition facts, however.
Directions
In medium bowl, mix all dry ingredients together.
In a separate bowl, combine liquid ingredients.
Pour dry ingredients slowly into liquid mix, and stir together with a fork. If it is way too runny, stir in more flour.
Preheat your oven to 330 degrees Fahrenheit, and set cookie dough into the refrigerator for 15 minutes.
After 15 minutes, pull dough out of the fridge. Drop 1 Tbsp scoops of dough onto cookie sheet.
Bake for 12-14 minutes, or until golden brown.

I'm not worried about low-sodium. Or anything. I'm literally at the point in my life where cardboard pizza is a blessing.
